Owned by the same group that owns Kuriya Fresh Fish Market, this excellent restaurant is the local outlet of a small but successful chain, with outlets in Japan and Australia.
As its name denotes, Soba dishes are the main thing here... Soba is a type of thin Japanese noodle made from buckwheat flour. It is served either chilled with a dipping sauce, or in hot broth as a noodle soup.
Shimbashi prides itself for using top quality, freshly ground organic fragrant buckwheat... the noodles are prepared moments before the meal, by a professional Soba-master, and the results are, indeed, superb...
The menu presents mostly set-menu-options (although there are some a-la-carte choices) that usually include a main soba dish, accompanied by Tempura, Sashimi, Maki and some other side dishes and sauces...
All in all, it's very recommended for a nice meal... not the kind of place for a candlelit romantic dinner, but certainly pleasant and enjoyable.
