Dry aging is a long-standing tradition that produces extremely tender and flavorful beef : The beef is stored in a custom-designed cooler where temperature, circulation and humidity are carefully monitored, up to a month.
During the process, moisture evaporates from the muscle, creating a greater concentration of beefy flavor and taste. Otherwise, the beef's natural enzymes break down and tenderize the meat.
Prices are somewhat on the high side but the quality is hands down excellent : A-la-carte dinner is around HK$ 400-600, although there are some good set-menu options, especially during lunch time.
