The Chinese White Dolphin (Or Indo-Pacific Humpback Dolphin) that lives around the Pearl River Delta and South China Coast is popularly known as Hong Kong's pink dolphin: That is thanks to its pinkish skin (Result of blood vessels near the skin surface that help those dolphins to better regulate their body temperature).
Hong Kong Dolphinwatch has been operating Dolphin watching cruises since 1995 and is considered the best. They depart every Wednesday, Friday and Sunday at 9am from the lobby of Kowloon Hotel in Tsim sha Tsui and travel to the modern town of Tung Chung on Lantau Island (Near the airport), where the passengers switch to a boat and cruise to the area of Sha Chau and Lung Kwu Chau Marine Park.
The cruise itself takes around 2.5 - 3 hours, so by lunch time you should be back in Tsim sha Tsui.
At the time of writing, the tour's rack rate is HK$ 360 for an adult and half of that for a kid of under 12.
